“Chilli it’s either blood red or nature green. But almost always loaded with spice. Cut and it will sting. Taste it and it will bite. But chilli, that too yellow!!! Simply indigestible. So did even I think. Till one fine day, during my stay at Meerut, where my grandparents and mother are from, the discovery happened. I have traveled the length and breadth of India in search of the unique tastes and flavours of the regions. The divine inspiration for many of my recipes has come from the melting pot of these local flavours.
So it happened a few years ago. I happened to visit Meerut on one such culinary journey. As all food connoisseurs are aware, Meerut is well known for its unique chaats. And what best place to sample it than the streets. It was here that I chanced upon my ‘Yellow Chilli’. I was astonished to find “peeli mirchi masala” being used in the preparation of the chaat. This special yellow chili spice mix added that extra zing and brought together a confluence of flavours, aroma and colours.
One bite was all it took for ‘The Yellow Chilli’ to come into being. ‘The Yellow Chilli’ to come is not an imaginary world. As you can see it is derived from the flavours of India. So go ahead. I am sure you will enjoy the taste that is yellow.”
